“Yonkers Joe” offers more information than you probably ever wanted to know about crooked small-time gamblers and the sophisticated surveillance techniques employed by casinos to detect them. The title character (Chazz Palminteri, the movie’s executive producer), who lives in Yonkers, is a card sharp and virtuoso at slipping loaded dice into crap games.
